SWEET PUMPKIN STEW (Gummadikaya Antu Pulusu)

This is a delicious curry rich with many health benefits. Pumpkin is rich in beta carotene which is an anti-oxidant that protects against heart diseases and reduces the risk of cancer. Easy to prepare dish.



Ingredients
Red Pumpkin pieces 1 cup
1 Onion
A small lemon sized tamarind 
2-3 green chillies
1/4 tbsp turmeric powder
1 tbsp chilly powder
1 tbsp jaggery (adjust according to your taste)
Salt to taste

Seasoning Ingredients
2-3 tbsp cooking oil
1/2 tbsp mustard seeds
1/2 tbsp cumin seeds
1/2 tbsp fenugreek seeds
2-3 red chillies
curry leaves
1 inch cinnamon stick
2-3 cloves


Method
Cut the pumpkin pieces to 2 inch cubes. Chop the onions and keep aside. Soak tamarind in 1 cup water and keep it aside.
Now take a cooking vessel, add oil and add all the seasoning ingredients and then add onions, green chillies slit to half, fry for 2-3 minutes. Now add pumpkin pieces and fry for 5 min and cover the vessel with lid for another 5 minutes.















Then add salt, turmeric powder, chilly powder and close the lid for another 5 minutes.
Now add water and let it boil till the pumpkin pieces turn soft. Once it is done add the tamarind juice and let it boil for 5 minutes.
Finally add the jaggery and bring it to boil for 2 minutes with lid covered till the stew turns thick.
Finally add 1 tbsp ghee and garnish with coriander leaves and turn off the flame.
Serve hot with rice.

PRAWN CURRY

A refreshing combination of prawns with coconut milk with great taste.















Ingredients
500gms prawns
2 Onions
2 Tomatoes
1 tbsp crushed ginger
4-5 cloves of crushed garlic
2 tbsp chilly powder
1 tbsp pepper powder
1/2 tbsp cumin powder
1/2 tbsp turmeric powder
Thick coconut milk 1-2 cups
Curry leaves
Salt to taste

Method
Clean the prawns and keep them aside.
Make a paste of chilly powder, turmeric powder, cumin powder, pepper powder.
Take a pan, heat oil, add curry leaves, ginger, garlic, onions and fry till onions turn translucent. Add the paste of all powders.
Now add tomatoes and cook for 5-10 minutes, now add the prawns and cook till are the prawns are done. Finally add the coconut milk and for 5 minutes and turn off the stove.

PRAWN FRY (chemmeen fry)

A simple recipe with combination of great flavors.


Ingredients
250gms Prawns
1 tbsp ginger-garlic paste
1 tbsp chilly powder
1/4 tbsp turmeric powder
1/2 tbsp pepper powder
2tbsp lemon juice
2 tbsp coconut oil
Finely chopped curry leaves
1/4 tbsp red chilly flakes


Method
Make a thick paste of above mentioned ingredients and marinate prawns with the paste for half an hour. Take a frying pan and shallow fry in medium flame for 10 minutes.
Do not over fry the prawns as they would become hard.

LEMON HONEY CHICKEN

A unique combination of honey and lemon with chicken. A must try dish.





















Ingredients
2 Chicken leg pieces/Chicken breasts
2 tbsp cornflour
4 cloves of crushed garlic
1-2 tbsp of red chilly flakes
1 tbsp soya sauce
1 lemon
2 tbsp of honey
1 tbsp vegetable oil
salt to taste

Method
Make a paste of above mentioned ingredients and marinate the chicken leg pieces/breasts for half an hour to 1 hr.
Now take a frying pan, add 4-5 tbsp of oil and fry the marinated leg pieces till they turn golden brown evenly on all sides.

your delicious Lemon Honey Chicken is ready to serve.

CAULIFLOWER FRITTERS

A delicious and unique way to prepare cauliflower with great taste.
















Ingredients
Cauliflower steamed 2 cups
2 eggs
2-3 cloves of crushed garlic
1-2 tbsp of olive oil
Salt and pepper
2-3 tbsp of grated cheese
1 cup wheat flour
Required amount of hot water 


Method
Steam the cauliflower pieces and keep them aside
Now take a bowl make a thick batter with the above mentioned ingredients.
Now heat 1-2 tbsp of oil in a  pan, pour the batter to form the fritter and fry till it turns golden brown on both sides of fritter.

Your cauliflower fritters are ready to taste.

PANEER BUTTER MASALA

One of the favourites of almost everyone of us. Easy and delicious dish to prepare readily at home.















Ingredients
100gm Paneer
2-3tbsp butter
3-4 cloves garlic
1 inch sized ginger
1 onion
2 tomatoes
1/2 tbsp chilly powder
1 tbsp corriander powder
1 tbsp garam masala powder
Salt to taste

Method
Cut the paneer into 1 inch cubes and fry them in oil for 2-3 minutes till they turn light brown in color.
Chop the onion thinly. Make toamto puree
Now take a pan, add butter, add sliced onion and fry, at this point add a pinch of salt. Once they become translucent, add crushed ginger and garlic and fry them.
Now add all the powders in the order mentioned above.
Fry for another 4-5 minutes and finally add the tomato puree. Add salt to taste.
Cook till it's raw smell and taste disappears, finally add some cream to it (optional) and turn of the stove.

PALAK PANEER

This is a healthy and delicious dish which is rich in nutrients added to it's taste.















Ingredients
100gms Paneer
3-4 bunches of Spinach leaves
1-2 green chillies
a small piece of ginger
3-4 cloves of garlic
1-2 Onion thinly sliced
1-2 tomatoes 
1/4 tbsp chilly powder
1/4 tbsp cumin powder
1 tbsp garam masala powder
3-4 tbsp of butter



Method

Slice the paneer to 1 inch cubes, fry them in 2-3 tbsp of butter for 2 minutes. Keep it aside.
Boil the spinach leaves for about 10 minutes, then let it cool down.
Slice the onion very thinly, prepare tomato puree.
Now grind the spinach leaves along with ginger, garlic, green chillies.
Take a pan, add butter, onions and fry till they turn translucent,now add chilly powder, cumin powder, garam masala powder, let it fry for 2-3 minutes. 
Then add the tomato puree, cook it till it's raw smell disappears.
Finally add the spinach leaves paste to it. Add paneer pieces to it.
Cook for 4-5 minutes. Turn off the stove.


Yummy Palak Paneer is ready to taste.

EGG BONDA

Egg bonda is a simple and delicious snack that can be prepared at home easily.





















Ingredients
4 Boiled eggs 
1cup of gram flour (besan)
1/2 tsp Chilly powder
A pinch of Turmeric powder
Salt to taste
Oil to fry


Method
Mix gram flour, Chilly powder, turmeric powder and salt thoroughly and add water to make it to a thick paste.

Slice the eggs into small even pieces and dip them into the paste. Make sure it is coated evenly.

Heat the oil in a pan and drop the coated egg pieces one by one.

Fry them in medium flame till they turn golden brown.

Your Tasty Egg Bonda is ready to serve !!!

MAMBAZHA PULISSERY

Mambazha pulissery is a unique authentic kerala recipe cooked with ripe mangoes and curd. Its a very easy and simple dish to prepare. Try this and enjoy the delicious taste of mangoes in a unique way.















Ingredients
2-3 ripe mangoes
Curd ( 1/2 lt)
1 Cup Grated coconut 
1tbsp cumin seeds
1/4tbsp mustard seeds
1-2 cloves of garlic
1-2 green chillies
1/2 tbsp turmeric powder
Salt to taste

Seasoning Ingredients
2-3tbsp coconut oil / cooking oil
1tbsp mustard seeds
1tbsp fenugreek powder
A few curry leaves
2-3 red chillies

Method

Peel off the skin of mangoes and cut them into small pieces.
Now take the grated coconut, cumin seeds, mustard seeds, garlic and green chillies and  turmeric powder, grind to paste, add water if necessary and keep it aside.
Now take a vessel, put the mango pieces and add 1 cup of water, salt to taste, a pinch of turmeric, bring it to boil, now low the flame and add the ground paste into the boiling mangoes and add salt to taste.Just heat it for 2-3 minutes and turn off the stove.
Now take another pan, add all the seasoning ingredients and fry them and finally add it into the prepared curry.

Taste and delicious mambazha pulissery is ready to serve.

PANEER FRIED RICE

This is a Chinese recipe, simple and easy to cook, delicious and filled with full of flavors. Paneer is a good source of calcium and proteins and can prevent stomach disorders.















Ingredients
2 cups of Basmati rice
1 big Capsicum
2 Carrots
50 gm Paneer
50 gm Butter
3-4 tbsp of soya sauce
Salt to taste

Method
Grate carrots and capsicum into thin slices, mix 1tbsp of soya sauce and keep aside
Soak paneer in luke warm water for 2 minutes and then grate into thin slices and keep aside.
Soak rice for half an hour, then drain the water and keep the rice aside.
Now take a pan, put a generous slice of butter, fry the paneer pieces for 2-3 minutes till they turn light brown. Do not over fry them which makes the paneer hard.
Now fry carrots and capsicum, add required salt and fry till they become tender.
Take a pressure cooker add a generous amount of ghee, then add 3 cups of water, add salt to taste, boil it for 5-10 minutes, now add the rice, close it with a lid and let it cook.
 Take a pan, add butter, now mix the fried capsicum, carrots and paneer with cooked rice, add 1-2 tbsp of soya sauce.
Turn off the heat.
Delicious and yummy paneer fried is ready to serve.

POTATO CURRY

This is a very simple and tasty dish which can be prepared easily.
















Ingredients
1-2 chopped onions
1-2 green chillies
2 tomatoes
2-3 pods of garlic
1/2 an inch sliced ginger
2-3 potatoes
2-3 cloves
small cinnamon stick
1/2 tbsp turmeric

Seasoning Ingredients
 2 tbsp of cooking oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
2-3 red chillies
curry leaves
1/2 tbsp chana dal
1/2 tbsp urad dal


Method
Slice the potatoes into 1 inch cubes. Put all the above mentioned ingredients into a pressure cooker along with the sliced potatoes. Let it cook till the potatoes are well cooked.
Take another vessel, heat oil and add all the seasoning ingredients and fry and then add the cooked potatoes and cook it for 3-4 minutes. Garnish with coriander leaves and turn off the stove.

VANILLA CAKE

No worries if you don't have an oven at home, you can very well bake a delicious cake using a pressure cooker. Here is the recipe to bake a yummy vanilla cake















Ingredients
3 eggs
1 cup sugar
1 cup butter or 5-6 tbsp of vegetable oil
1 1/2 cup flour (maida)
1 tbsp baking powder
1 tbsp vanilla essence

Method
Beat the eggs and add the powdered sugar, then add all the above mentioned ingredients and mix them well.
If you don't have a blender, you can blend it in mixer as well.
Now take a vessel suitable to be placed in a cooker
Coat it well with butter and then pour the mixture into it.
Tap it well to avoid any air bubbles.
Now heat the pressure cooker without the lid for 5 minutes just as you preheat an oven.
Then place the vessel in it and close it with the cooker lid but without the whistle on top.
Now let it cook for 30min in low heat.
Remove the lid after 30min and check if the cake is baked properly. You can check that by poking a toothpick into the cake, if nothing sticks to the toothpick, it indicates your cake is perfectly baked, if not close the lis and let it cook for other 5-10 min. Turn off the stove and now you can see a wonderful delicious cake is ready to taste.
